Nothing better than a really good, fresh fruit salad in the summer. We have been eating a lot of it lately.

My favorite
Peaches
Strawberries
grapes
blue berries
raspberries.

We had some really good cantalope too. My aunt and uncle are growing 20 acres of them this year. Good Stuff!!

That's my favorite breakfast . Fruit salad mixed into viili. Viili is special kind of yogurt popular in Finland that is fun to eat because of its unique gooey honey-like texture and is also very easy to prepar since it is made at room temperature . Just fill a jar full of milk , stir in a tablespoon from your previous batch , loosely cover and let sit on the counter for a day and then you have yogurt .

Well Viili sounds interesting. There used to be a bread mix that you did the same thing with. It was awesome. I haven't see that around in a long time.

So I guess you have to have somebody give you some viili to start?

Yeah you have to have someone give you an initial starter of viili but after that you are set for life . Kefir is fun to make too , but is different in that you use "grains" to culture the milk with and then strain out the grains each batch . Over time the grains grow and you can share them with friends . I have really noticed a big difference in health since I added probiotics to my diet such as viili, kefir and kombucha tea . Viili , kombucha and kefir starters can usually be found on ebay and places such as http://www.fermentedtreasures.com .

Kefir is great because it doesn't provide transient bacteria like yogurt , rather it actually repopulates the gut with over 40 different beneficial bacteria unlike yogurts usual 2 or 3. Here is a fun kefir website to check out if you get bored :

Kefir has a mysterious and unique history .Noone knows how the grains came into being . Also, the grains were hidden away and exlusive to the people of the caucasus mountrains for many hundreds of years.
Kefir has been credited with healing powers since the early eighteenth century. Kefir grains were considered a gift from Allah [God] among the Moslem tribes-people of the Northern Caucasus Mountains and the grains were passed down from generation to generation. The folks of this particular region considered kefir grains a source of family and tribal wealth, and the secret process of kefir was closely guarded to the extend of protecting the art and the mother-culture [kefir grains], with their very lives.

In the early 1900s, the All-Russian Physicians' Society contacted two Blandovs brothers, who owned a cheese factory in the northern Caucasus Mountains, asking the brothers for their help to obtain the kefir culture. The brothers decided to take on the challenge, and planned to use one of their employees, a beautiful young woman named Irina Sakharova, to coax a Caucasian Prince, Bek-Mirza Barchorov into giving her some kefir grains. Irina indeed dazzled the Prince with her beauty, but the Prince refused to give her any of his precious probiotic-jewels, possibly due to strong religious beliefs.

However, the beauty-dazzled Prince wasn't willing to giving up Irina, so he instructed some of his men to kidnap her as she returned home. Against her will, the men brought Irina back to the Prince's courtyard, where the Prince, hoping to win her love, proposed her hand in marriage, however, Irina understandably refused. The Blandovs brothers eventually rescued Irina from the clutches of the Prince. Then, backed by the two brothers, Irina brought her case against the Prince to the Czar's court. The Prince offered Irina gold and jewels as reparation for the crimes done against her, but she refused his offer. Instead, as a settlement of her suit against Prince Bek-Mirza Barchorov, Irina demanded, and received, probiotic jewels [kefir grains] instead. In late 1908, Irina Sakharova brought the first amounts of kefir to Moscow, where it was used medicinally in lung sanatoriums as part-treatment for tuberculosis with great success.

At the age of 85 Irina, in 1973 received a letter from the Minister of the Food Industry of the former USSR, expressing grateful acknowledgment of her primary role in bringing kefir to the Russian people.

Kombucha, I had one of those in the fridge and I was going to make up a batch but my wife through it out. I need to find another. One of my patients said that it was great, helped with their "arthritis" in shoulders and knees.

The real funny thing is I was trying to explain Kefir to someone earlier today, didn't really know anything more that fermented milk. I know you can get kits of Mercola.com and some other places.

The grocery stores around here (Goshen, Indiana) sell various flavors or Lifeway and Helios brand kefir and it tastes very much like yogurt . Ebay usually has several reputable sellers of both Kefir grains and Kombucha SCOBYs(SCOBY= Symbiotic Culture Of Bacteria and Yeast) .

The tea has definitely made a difference in how my joints feel and I enjoy the apple cider-like taste .
